Recos for (non-image) backup/restore (Windows 10)

Hi,
Frankly speaking my backup data "strategy" has been somewhat haphazard. Mostly, I have a 4TB drive attached to one of my routers, and I occasionally (if I remember) backup what I think are important files or dirs to it.
However, I just got a new 8TB USB drive, so now I am thinking that I want to try to be a little more disciplined about data backups, for all of my machines. Mainly these
My main laptop (a Dell Inspiron 1500)
A more portable laptop (a Dell Inspiron 13")
I always configure my machines with at least:
C: - Windows
D: - A partition for swap/pagefile.sys
E: - Data drive
I use TBI IFW or IFD to backup my Windows/C: drives occasionally, but have not been consistent at all with the data drive, so I was thinking that I should use some kind of backup application and do scheduled incrementals for both laptops, with the new 8TB USB drive either locally attached (I'd move it between machines) or over network (if I get lazy !).
So I've been looking around and there seems like TONS of free versions that might work well, and I am curious what you all use/recommend? I'm also not unwilling to consider a non-free product, but probably it would have to be "worth it" (vs. free offerings).
I guess since the 8TB drive is pretty large, I'd like to use it to hold the backups for both/all my machines, so whatever product I end up using should be able to maintain backups for multiple different machines. I'd also like to be able to restore individual files or dirs on-demand.
If there are other criteria that are important, I'd be interested in those also.
